Today’s recipe for AIP Chocolate Cake comes from Christina creator of A Clean Plate  (original recipe linked here). This cake turned out SOOOO good. It is moist, not too sweet, and has great texture. All you have to do is blend until smooth and bake… that’s it! It is  extremely easy to make and is made with easy to find ingredients.  The only thing that I did differently was using ripe plantains instead of the green plantains called for the recipe. I also had to bake my cake for an additional 15-20 minutes, but like I said this cake turned out so fabulous regardless.  What I love, is that it tastes like chocolate if you haven’t eaten chocolate in months. Use coco powder to substitute for the carob if making a Paleo version of this cake.     Carrot cake is what I really miss around these Easter days….THAT and funfetti birthday cake from my childhood! But that’s all hard with AIP… Thanks for the recipe! I’ve made this in the past too, mine was more dense brownie texture, so that extra 15-20 minutes is probably necessary! Wonderful blog <3
