Apple Leek Soup

 Looking for a quick weeknight meal? Well look no further, because you may just have found your answer here with this Apple Leek Soup recipe! If you like sweet and savory then this recipe is for your. Ok, I will be honest it is more savory than sweet, but if you have extra time on your hands then cook up a butternut squash and add it to the mix. You never know it must just turn out pretty good…so, why not give it a try! That was my original idea-to make an apple butternut squash leek soup, but I decided on this instead. You may see it in a future post though!

Apple Leek Soup

Ingredients

  • 3-4 leeks
  • 1 1/2 c . unsweetened apple sauce
  • 1-2 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • few sprigs fresh oregano
  • 1/2 c milk of choice-optional, and use more if needed

Instructions

  1. Clean leeks and cut crosswise into thirds
  2. Place in saucepan and cover with 2-3 c. water
  3. Cook until tender
  4. transfer leeks and water to food processor or blender and blend until smooth. You can also use an immersion blender and puree directly in the pot.
  5. Add the rest of ingredients through oregano and blend until smooth.

  6. transfer back to saucepan and add the milk, cream, or milk substitute. Heat over medium heat until desired thickness.
