Avocado & Kalamata Salad with Dill Ranch Dressing

Servings 1 Person

Ingredients

For the Salad

  • spring greens
  • Kalamata olives
  • sliced onion red or white
  • broccoli slaw
  • avocado

For the Dressing

  • 1 can coconut milk
  • 13-15 oz Water fill up the empty can of coconut milk and see the note below
  • 2-3 tsp sea salt
  • 3 tsp onion powder or dried minced onion optional
  • 1 tsp garlic powder
  • 1 Tbs dried dill

Instructions

  1. Build your salad with any amount of the salad components, it is really based upon your preferences and your tastes. For references, I use about 2 handfuls of greens, 8-10 olives, 2 half moon slices of onions, a small handful of broccoli slaw, and 1 avocado.
  2. Then toss with the dressing as follows. To prepare the dressing combine the coconut milk, water, salt, onion powder, garlic powder, and dill in a mason jar. With a lid on the mason jar shake until well combined.

Recipe Notes

NOTE: The thickness of the dressing is up to you. Add more or less water depending upon your preferences. If adjusting the water amount, make sure to adjust the amount of seasonings added. What I have provided is a rough estimate.
