Today’s post is all about. . . .Stuffed Baked Apples. Imagine waking up to the smell of apple pie baking in the oven on a crisp fall day. That is exactly what happens when these amazing little guys are made for breakfast. These baked apples are perfect to make for a crowd and are easy to whip up fast. The apples can cored the night before and if you splash a little lemon juice on them, they should be good to go for breakfast. Then when you wake up all you have to do is make the filling, spoon them into the apples and pop them into the oven. You can even take it a step further by mixing all the dry ingredients for the filling and then the wet ingredients in the morning. Below you will find ingredient amounts for 1 serving and the amount needed for 5 servings. ENJOY!
Can also cook in the microwave. Leave off the top if you want the oat mixture to become crunchy on the top. Can also place the top on at the end of baking for the last 3 minutes or so. For an AIP or Paleo version stuff with approved granola, dried fruit and nuts/seeds if they can be tolerated.
