For me breakfast is the best part of the day and this Banana Cinnamon Breakfast Porridge helps to start the morning off right with a healthy fat, fruit, and protein. What makes this porridge even better, is that is filling and will keep you going all morning. This recipe is a great substitute for traditional porridge, creamed wheat (Malt-O-Meal Hot Cereal), and oatmeal. Pour 1 c water in a saucepan and whisk in the gelatin. Allow to bloom for about 5 minutes, then gently heat the gelatin water mixture until all gelatin has dissolved. It is important to make sure the gelatin doesn't boil. I would recommend using a whisk to stir the gelatin while heating, and remove from heat when it starts to froth from whisking.
To serve, divide into bowls and to each bowl stir in 1 tsp to 1 Tbs collagen in powder form. Sprinkle with cinnamon and cloves if desired. Stir in the cut up banana or other fruit of choice. Drizzle with maple syrup if you would like it sweeter. This is also where you have free reign to add any other topping or mix in (fruit, yogurt, shredded coconut, nuts/seeds and nut butter if tolerable, etc.)
Store any leftovers in an airtight container in the refrigerator. Take note that the porridge will gel and become a little gelatin like. Just give them a stir or heat up in the microwave or stove top to remedy this. I even like to stir in more water to make it more runny.
