This Chocolate Chia Pudding is just my Vanilla Chia Seed Pudding with cocoa powder added to make it chocolatey! Off course you could always add in coconut if you want to and make it almond joy flavored (my favorite). Add chocolate chips, coconut chunks, or even coconut extract (omit vanilla extract). I am sort of a coconut fan and this Chocolate Chia Pudding is excellent on its own; but it is even better with coconut! That’s just me though 🙂

  • 1/3 c . chia seeds
  • 3 c . milk of choice *See note I use almond milk
  • Sweetner of choice stevia, honey, sugar, agave etc. ...
  • vanilla extract
  • Dash of cinnamon-optional
  • 3 Tbs Cocoa powder *See note


  1. place 1 c. milk and chia seeds in a large mason jar, a bowl, or a container with a lid/cover.
  2. Stir or shake the mixture until well combined
  3. Let sit in the refrigerator overnight
  4. Stir well when the mixture is taken out of the refrigerator and it is advisable to stir often to break up any clumps of chia seeds
  5. Add 1/2 c. milk and stir in well
  6. let sit for 1/2 hour or until thickened
  7. repeat the process of adding milk and letting sit until you have add the other 2 c.s of milk
  8. mix in vanilla extract, cinnamon, and cocoa powder
  9. sweeten to taste

Recipe Notes

Use 2 c. almond milk for a thicker pudding To make LESS of the VANILLA CHIA PUDDING use 5 1/2 Tbsp. per 1 cup of milk May be able to use 1 Tbsp. chia seeds per 1/4 c. of milk Adding in less sweetener makes the pudding more dark chocolate tasting.
