This Cucumber Tomato Blue Cheese Salad was my lunch today. I will admit that I absolutely love blue cheese. I could eat it by the spoonful….actually, that might be too rich for me. However I do love blue cheese and like to eat it plain (not by the spoonful though). If you are not a blue cheese lover like me then I would suggest leaving it out or using another type of cheese that you really enjoy. This salad is also really great without cheese as well. When I eat it without cheese I like sprinkle large chunks of sea salt on top. Then the salad has blander parts with bursts of saltiness. I use a Celtic sea salt that I found at the local co-op and it is quite delicious!
