Today’s post. . .Dairy Milk Alternative with Canned Coconut Milk. Since I don’t eat dairy I love seeing a wide variety of nut milks, coconut milks, and various milk blends out on the food market. The only problem with many of the dairy milk alternatives is the amount of sweeteners, gums, and other additives to make them thicker and more palatable. Because I am on the autoimmune protocol I wanted to eliminate any possible sources of inflammation (the gums in many of the milk alternatives being one). This coconut milk recipe is just that….no gums and no additives.

 What I really like about this coconut milk recipe is that it is very easy, quick (It is a dump, mix, shake/blend, and done kind of recipe), and customizable, which I am all for.  You can add different sweeteners to sweeten to taste or just leave it plain.  You can even make a chocolate version if you so choose. The best part is that you are in control of what you make, and ultimately end up putting into your body. If I had the choice to choose a additive filled product over one that is not, I would definitely choose the one that is not. Canned Coconut Milk Dairy Milk Alternative
The dollars and cents spent to make this coconut milk is under $2.00 (per half gallon). As you can see, it is quite economical and costs less than the other milk alternatives which run around $3-4.00, which is a bonus. The only downside is that the milk won’t be as thick or creamy as those out on market, but I’d much rather have it be healthier.

I forgot to mention, this milk contains all the amazing benefits and healing nutrients that coconut has to offer. When consumed, you will be getting all the healthy fats found in coconuts (the medium chain fatty acids) that are easier for your body to break down and use for energy. With so many benefits what is there not like? ….coconuts are practically a cure all and in a class all of their own (but that is a later post).

When buying coconut milk make sure you look for the kind in the BPA free can (See the picture below for a BPA free symbol)  BPA can wreck havoc on your health and is not good…read more here by Dr. Axe.  That being said, I only buy my coconut milk in the “Golden Star” brand, full fat of course. Coconut milk isn’t heavily laden with insecticides, pesticides, or chemical residues so it is alright not to buy it organic. Dairy Milk Alternative with Canned Coconut Milk (plain, vanilla, chocolate)

Ingredients

  • For plain coconut milk:
  • 1 can full fat coconut milk with no gums, thickeners, or additives
  • 6 1/3 c . Water
  • For chocolate flavored coconut milk:
  • 1 can full fat coconut milk with no gums, thickeners, or additives
  • 6 1/3 c . Water
  • Stevia or sweetner of choice sweeten to taste
  • Carob or unsweetened cocoa powder for AIP
  • For Vanilla flavored coconut milk:
  • 1 can full fat coconut milk with no gums, thickeners, or additives
  • 6 1/3 c . Water
  • Stevia or sweetner of choice sweeten to taste
  • Vanilla extract to taste

Instructions

  1. Choose what type of milk you are going to make.
  2. Make sure your coconut milk is fully mixed with no chunks, or coconut cream separated from the water. If so blend it in a blender until smooth.
  3. Combine all ingredients together and mix until combined. You can do this in a blender, in a bowl with a whisk or shake together in a 1/2 gallon jug (the last method is what I do).
  4. Store in the refrigerator in an airtight bottle for 1 week.
  5. Use as you would any other type of milk and shake before using.

Recipe Notes

You can make a thicker milk by adding less water.
