This past week I have gone from liver hater to liver lover after I made this Delicious  AIP Approved Liver Spread! I am not a total liver lover; because I do not like it on its own such as in the dish  liver and onions dish, but I do like this liver pate I made. I mean…I like it A LOT. I think it will take me a while to enjoy liver on its own and is something that I will have to slowly work up to, by slowly adding it into different ground meats in various ratios. Liver can have a strange soft texture and has a metallic taste, but it is a nutritional powerhouse and not to mention great for healing the gut. If you look up the benefits eating this organ meat and the nutrition it provides, you are sure to be impressed (links below). This spread is great mixed with tuna, to make a tuna spread for a wrap or sandwich (recipe coming soon!) or dipped into with vegetables or chips.  I can only hope that you like this as much as I do, because I think it is quite fabulous!

*Please note that consuming too much liver within a short period of time is harmful to the body. You can develop an acute vitamin A toxicity. This happened to me…symptoms included itchy hives, that disappeared after abstaining from vitamin A rich foods (like liver!) . Turns out I loved this Delicious  AIP Approved Liver Spread too much. Only eat liver 1-2 times a week and keep it to small amounts to avoid toxicity, this way it can enjoyed as part of a healthy diet.

Delicious AIP Approved Liver Spread

Servings 12 People


  • 1 Tbs coconut oil
  • 1-2 onions chopped
  • 1-2 Tbs minced garlic not dried
  • 1 lb liver I used chicken
  • 1-2 Tbs Italian seasoning
  • 7 slices of bacon
  • 1/2 Tbs salt
  • 3/4 c apple sauce
  • 3 Tbs apple cider vinegar
  • 2 Tbs balsamic vinegar


  1. Saute onions, coconut oil and garlic in a pan until onions are browned and translucent in a large frying pan or saute pan.
  2. Add the liver and Italian seasoning and cook until cooked all the way through.
  3. Remove the liver/onion mixture from the pan and transfer to a food processor.
  4. Place the bacon in the same fry pan and cook until brown and crispy.
  5. Remove the bacon from the pan and pat dry to remove the extra fat.
  6. Add the bacon and the rest of the ingredients to the food processor and blend until smooth.
  7. Place in an airtight container and store in the refrigerator. (I usually freeze half by just placing in a airtight container and putting in the freezer).
  8. Spread on sandwiches/wraps, eat with vegetables, mix with tuna, or use in other dishes!
