Nothing says fall better than pumpkin….the flavors of fall are my all time favorite of them all. This is especially true when chocolate and caramel is added into the mix. Pumpkin has to be on the top of my list and this decadent treat is sure to satisfy almost any sweet tooth. Filled with goey chocolate, chunks of chocolate, cinnamon, spice and lots of nice. I almost added more layers of coconut, graham crackers and caramel syrup, but I though the jar might not have enough room, so I think I will save those for next time as those will be a nice addition.  With the fall weather on its way you can cozy up on the couch after a long and settle in to this satisfying treat (or maybe have for breakfast or snack as a midday treat)…with the added benefits of chia seeds.

Layered Chocolate Pumpkin Chia Parfait

Ingredients

  • 1/4 c Vanilla Chia Pudding *See note
  • 1/4 c . Pumpkin Puree
  • pinch of Stevia sweetener
  • Cinnamon or pumpkin spice to taste
  • chocolate sauce
  • mini chocolate chips
  • Coconut flakes
  • graham crackers - Optional grain free or gluten free
  • whipped topping of choice

Instructions

  1. Make one recipe (or less) of the vanilla chia pudding
  2. mix pumpkin puree with sweetener and cinnamon or pumpkin spice
  3. Layer components including the vanilla chia pudding, pumpkin chia pudding, chocolate sauce, chocolate chips, coconut flakes, graham crackers, and whipped topping in a bowl or cup. Do whatever suits you best. As always feel free to add any other additional ingredients or layers like caramel sauce and more pumpkin.
