Stevia Sweetened Cranberry Dessert Sauce

It’s cranberry season! If you live in the mid-west its time to take advantage of this fall fruit. Traditionally cranberries make an appearance on thanksgiving tables across the nation, but nothing says you can’t pick up a bag at your local grocery store and whip up some delicious treats. Cranberries are naturally tart and it could be possible to use it in some ethnic cooking. I think would add a nice flavor or flare to some sort of dish….but I am not quite sure what one yet. Anyways, this recipe is kinda like the cranberry sauce, only better with very few ingredients to make a healthy dessert (or snack)! By the way…This post has lost of pictures! Looks like I may have gotten a little carried away! 🙂

Stevia Sweetened Cranberry Dessert or Sauce

Servings 1 serving

Ingredients

  • 1 c . cranberries
  • 2 packets stevia sweetened about 1 1/2 tsp granulated stevia sweetener, add more if needed
  • Whipped topping of choice-optional

Instructions

  1. Place cranberries in a microwave safe bowl.
  2. Microwave on high for 1 1/2 to 2 minutes or until soft and mushy.
  3. mix in stevia sweetener in the amount specified or sweeten to taste.
  4. Let cool and top with cool whip or eat warm with cool whip or eat without cool whip. Can also use coconut whipped cream.
  5. To make sauce: follow the instructions above, but increase the ingredient amounts. Sweeten to taste and omit the whipped topping.

    yum! You could also use full fat coconut milk (hardened in the back of the fridge then whipped) to make non-dairy cool whip!
