 This particular recipe for Lemon Garlic Grilled Chicken Marinade took me no time at all to prepare and tasted SO GOOD. This grilled chicken doesn’t taste 100% lemony, but the acidity from the lemon juice does add a nice brightness to compliment the caramelizing from the sugar.  After the chicken has been marinating for 2-3 hours it becomes time to throw these bad boys on the grill (not literally)! Grilling is, hands down, my favorite way to cook food whether it be meat or vegetables! I have yet to grill avocados, but those are next on the list and I hear they are phenomenal. Lemon Garlic Grilled Chicken

Ingredients

  • 2-3 lbs . chicken of choice (I used chicken thighs and legs with the skin on)
  • 1-2 Tbs . minced garlic
  • 1-2 Tbs . minced ginger
  • 1/4-1/2 c . lemon juice or balsamic vinegar (each will give a unique taste and are two variations, I used lemon juice)
  • 1/4-1/2 c . olive oil
  • 1 Tbs . sea salt
  • 1-2 Tbs . minced dried ground onion
  • 1/2 Tbs . black pepper (omit if on strict AIP)
  • 1/4 c . coconut sugar or other granulated sweetener or other sweetener *optional (I used coconut sugar)

Instructions

  1. Mix all ingredients in a zip lock bag and add the chicken.
  2. Place on a plate or a baking dish and allow to sit for 2-3 hours in the refrigerator.
  3. Prepare the grill (clean and preheat). Then, cook the chicken pieces on medium high heat, turning over halfway or periodically until the internal temperature reaches 165F and the chicken is cooked cooked all the way through.

  4. Remove from grill and allow to rest for 3-5 minutes before serving.
