Flax seed is a great alternative to using eggs in recipes calling for one or more eggs! You can even use ground chia seeds which are also vegan and vegetarian friendly along with flax seed. Another great thing about flax seeds are that they are packed with omega-3 fatty acids, lignans and can lower cholesterol levels! However, flax must be ground up, which makes the oils in them available for the body to use. If not ground up they will more than likely pass through the digestive system. You can also use chia seeds; 1 Tbs. whole chia seeds or 2 1/2 tsp ground.
