Frozen Banana Stick Popsicles – AIP, Paleo, Vegan, Vegetarian

I eat one of these Frozen Banana Sticks every morning as part of my breakfast. When these bananas are left to thaw just a little bit, they are creamy and smooth to the palate. To me they are almost like eating an ice cream bar for breakfast and who wouldn’t want that everyday! One of  my favorite ways that I like to eat these frozen banana sticks is to sprinkle on cinnamon and eat them that way. They are also good with a little peanut butter or even a chocolate hazelnut spread! The possibilities are really endless in what you can do with these Frozen Banana Sticks and they are a great way to do something different with a breakfast staple!

Frozen Banana Sticks

Ingredients

  • Bananas! the more ripe the better!

Instructions

  1. Peel bananas.
  2. Insert a Popsicle stick in the bottom and about 1-1 1/2 inches into the base. You can also use part of a kabob skewer, just make sure to shorten it.
  3. Freeze until solid.
  4. When ready to eat, let thaw for 10 minutes or so. It really depends on how ripe the bananas were before they were frozen. The more ripe the bananas were the less time it takes to thaw and sweeter they taste.

Recipe Notes

Can cover in chocolate and dip in desired toppings such as cereal, granola, graham crackers, coconut etc.
