Today’s recipe is for Iced Honey Lemon Bars. A sweet treat, especially for the beginning of the week. These AIP and Paleo friendly bars are low in added sugar and naturally sweetened, which is perfect if you are watching your sugar intake. These bars are moist, a little gooey, and slightly cake-like. They are refreshing, light; perfect for spring, summer, or anytime of the year.  Enjoy!

Servings 20 servings


  • 3 bananas mashed
  • 1/2 c . applesauce
  • 2 lemons
  • 1 can full fat coconut milk
  • 2/3 c arrowroot starch
  • 2/3 c coconut flour
  • 2 tbs gelatin
  • 1 tsp baking soda
  • 1/2 tsp sea salt
  • 1/3 c coconut butter
  • 1/3 c honey


  1. Preheat the oven to 400F and grease a 9 x13 glass baking dish.
  2. In a medium bowl combine the bananas, applesauce, zest and juice of 2 lemons, and coconut milk. Mix thoroughly.
  3. In a separate smaller bowl, combine the arrowroot starch, coconut flour, gelatin, baking soda, and sea salt.
  4. Stir in the dry ingredients into the wet and pour into the prepared pan. Spread the batter smooth.
  5. Bake for 35-45 minutes. Remove from oven when golden brown and allow to cool.
  6. Meanwhile melt together the honey and coconut butter and stir to make sure it is evenly mixed.
  7. Pour the honey coconut butter mixture over the top of the bars.
  8. Leave on the counter or refrigerator. Refrigerating will make the bars last longer and solidify the icing more. The honey will eventually seep into the bars the longer it sits. 

Recipe Notes

The Bars may seem more cake like at first, but will become more firm as it sits.
