 No Bake Larabar Energy Cookies are reminiscent of the Larabar fruit and nut bar. There is only one problem with Larabars….. they contain nuts and other ingredients, which are not allowed on the AIP diet. These cookies are EXTREMELY EASY to throw together when you are short on time and they also have a quick clean up time. I originally wanted to call them “Larabar Energy Bombs” since these are sure to give you a burst of energy if needed. I would strongly advise to consume these in moderation, since they probably have more sugar than is recommended. These No Bake Larabar Energy Cookies {AIP & Paleo} are great for a quick snack after a hard workout, hike, run, or other activity. They are also great for a  quick breakfast, sweet dessert, or afternoon indulgence.

Ingredients

  • 3/4 c white fig paste (about 8 white figs soaked in hot water until softened and pureed until smooth)
  • 1/3 c honey raw if possible
  • 1/3 c coconut oil
  • 1/2 c pumpkin puree
  • 1/2 tsp ginger
  • 3 c shredded coconut

Instructions

  1. Combine all ingredients except the shredded coconut in a microwave safe dish and heat slightly in the microwave to melt the coconut oil and to make the honey more runny. Mix the ingredients together until completely combined.
  2. Stir in the shredded coconut.
  3. Transfer to a parchment paper lined baking sheet in 1 Tbs increments.
  4. Refrigerate until firmed and set (about 2 hours).
  5. Store in an airtight container in the fridge.
