I made this One Pan Quinoa Chicken with Lemon and Cilantro for my dad and brother when then came to visit and it was a big hit. This recipe can also be made with rice instead of quinoa if you have rice on hand or if you prefer rice. This is definately something I will be making again and again. Simple and great tasting with minimal cleanup…just the way I like it.  Enjoy and I hope this dish become a favorite.

One Pan Quinoa Chicken with Lemon and Cilantro

Servings 8 Servings

Ingredients

  • 1 c. dried quinoa 2 cups cooked, I prepared mine in pressure cooker with 1 c. quinoa with 2 cups water. I put the pressure cooker on the 'Grain' setting for 11 minutes
  • 2-3 Tbs. olive oil
  • 2-3 medium onions sliced
  • 2-3 Tbs. minced garlic
  • splash of chicken broth or white wine enough to deglaze the pan
  • 3-4 boneless skinless chicken thighs cubed
  • 1 lemon juiced
  • 1/2 bunch cilantro chopped
  • 2-3 tsp lemon pepper
  • Salt to taste
  • broccoli or green beans steamed

Instructions

  1. Prepare the quinoa if it isn't already made.
  2. In a deep nonstick pan heat the oil on medium high. Once the oil is hot, add the onions, cover and cook until browned and almost burnt (I actually burned mine).
  3. Add the garlic halfway through cooking the onions.
  4. Prepare the steamed broccoli or grean beans if serving.

  5. Once the onions are done eglaze the pan with chicken broth or white wine and add the chicken. Cover the pan again and cook the chicken until it is cooked through an no pink remains.
  6. Stir in the quinoa, lemon juice, cilantro, lemon pepper, and salt.
  7. Serve with a steamed vegetable like green beans or broccoli.

Recipe Notes

This is great served with steamed broccoli or steamed green beans.
