This recipe for Oven Roasted Plantains is simple….and sometimes simple is best. These slightly crispy plantains are a great alternative to fried plantains and are another great starch/carb source.  Oven Roasted Plantains are a great addition to breakfast, as a quick snack, or side dish to lunch or dinner. I love eating plantains for breakfast every morning with, vegetables, and liver hidden in ground beef (recipe here).  I find this combination gives me a great start to the day along with energy to last all morning!

Ingredients

  • 4 plantains (Yellow with black spots)
  • avocado oil, olive oil, or coconut oil I used avocado oil
  • sea salt

Instructions

  1. Preheat the oven to 450 F and line a baking sheet with parchment paper.
  2. To prepare the plantains first cut of each end. Then on the length of plantain make one long shallow cut the depth of peel from one end to the other. Remove the peel and cut into 1/2 inch slices or less (mine were 1/4 in thick).

  3. Transfer to baking sheet and lightly toss with avocado or olive oil and arrange the plantains so they are in a single layer on the baking sheet. Sprinkle the plantains with sea salt before baking.
  4. Bake for 12 minutes then remove for the oven and flip each plantain over. Then, bake for an additional 7-10 minutes.

      I store mine in an airtight container in the refrigerator for about 1 to 2 weeks. Hope that helps!
