This recipe for Oven Roasted Plantains is simple….and sometimes simple is best. These slightly crispy plantains are a great alternative to fried plantains and are another great starch/carb source. Oven Roasted Plantains are a great addition to breakfast, as a quick snack, or side dish to lunch or dinner. I love eating plantains for breakfast every morning with, vegetables, and liver hidden in ground beef (recipe here). I find this combination gives me a great start to the day along with energy to last all morning!
To prepare the plantains first cut of each end. Then on the length of plantain make one long shallow cut the depth of peel from one end to the other. Remove the peel and cut into 1/2 inch slices or less (mine were 1/4 in thick).
