This pumpkin chia seed pudding tastes like a pumpkin tapioca pudding or pumpkin pie  if you ask me. It is delicious while being nutritious and not to mention you get a full serving a vegetables in this sweet treat! Enjoy this recipe in fall or any time of the year (if you a pumpkin fanatic like me).  I will make this post short today so that you can cut straight to chase in the amazing delicious recipe below!

Pumpkin Chia Seed Pudding

STOP! READ THE FOLLOWING BEFORE PROCEEDING...VERY IMPORTANT! *In total this recipe takes at least one day at a minimum to make and stems off of the Vanilla Chia Seed Pudding recipe. Therefore it makes a big batch of vanilla pudding and one serving of pumpkin. It was designed to allow for various modifications and make a serving at a time from a large universal recipe. See NOTE for further adjustments below.

Ingredients

  • Read bold mater above as well as the NOTE below.
  • 1/3 c . chia seeds
  • 3 c . milk of choice *See note I use almond milk
  • Sweetner of choice stevia, honey, sugar, agave etc. ...
  • vanilla extract
  • 1/2 c . pureed pumpkin
  • cinnamon or pumpkin spice
  • additional toppings cool whip, cinnamon, graham crackers, chocolate chips, coconut, chocolate or caramel sauce, nuts/seeds, coconut milk whipped cream..whatever you desire

Instructions

  1. place milk and chia seeds in a large mason jar, a bowl, or a container with a lid.
  2. Stir or shake the mixture until well combined
  3. Let sit in the refrigerator overnight and into the next day until thickened
  4. Stir well when the mixture is taken out of the refrigerator and it is advisable to stir often and break up any clumps of chia seeds
  5. Add 1/2 c. milk and stir in well
  6. let sit for 1/2 hour or until thickened
  7. repeat the process of adding milk and letting sit until you have add the other 2 c.s of milk
  8. sweeten to taste
  9. mix in vanilla extract
  10. Stir 1/2 c or less of the pumpkin into 1/2 c. of the chia seed pudding
  11. Add the cinnamon or pumpkin spice
  12. sweetened to taste
  13. top with additional topping

Recipe Notes

Use 2 c. almond milk for a thicker pudding- When using this amount of milk the pudding is super thick To make MORE of the PUMPKIN PUDDING increase recipe and add more pumpkin to the whole batch along with additional spices and sweeteners To make LESS of the VANILLA CHIA PUDDING use 5 1/2 Tbsp. per 1 cup of milk
