This Simple Pressure Cooker Chicken Vegetable Soup is great for those cold winter days. I love making a gluten free brown oat bread that goes great with this soup. What I love most about this soup is that it uses the leftover chicken carcass from a previous meal so there is less waste. AND becuase the carcass bones are used this soup bone broth becomes the soup’s medium. So really it should be called Bone Broth Pressure Cooker Chicken Vegetable Soup. Either way it absolutely delicious. 🙂

Simple Pressure Cooker Chicken Vegetable Soup

Servings 10 servings

Ingredients

  • 1 whole cooked chicken carcass with meat still on the bones
  • 1 bunch of celery chopped
  • 5 large carrots peeled and sliced
  • 2 medium onions sliced or chopped
  • 3 bay leaves
  • salt to taste
  • black pepper to taste *omit for AIP

Instructions

  1. Combine all ingredients in the the instant pot and cover with water. 
  2. Secure the lid on the instant pot.
  3. Press the 'Soup' button and set the timer for 30 minutes.
  4. After the cooking has been finished the instant pot will beep. Let the pot depressurize naturally or turn the pressure release valve from 'Seal' to 'Vent'. I like to open the valve to 'Vent' and put a towel on top of it so the steam doesn't reach the ceiling.
  5. bowl portion of the instant pot from the instant pot base and place on a trivet.
  6. Remove the whole Using tongs and a spoon remove the chicken carcass and bones from the pot and allow to cool before handling further. Fish out the bay leaves while you are waiting for the carcass to cool off.
  7. Take the remaining meat off the bones and add the meat back to the soup.
  8. Let the soup cool down a bit more until it becomes a temperature that you are able to eat it at.

Recipe Notes

*Note: I like to sometimes add a tablespoon or two of chicken broth powder to the soup before cooking and the adjust the salt accordingly. I also like to serve this with a gluten free brown oat bread.
