Stevia Syrup

With room to suit any taste preference this stevia syrup is sure to please any palate. Not only is it versatile it isn’t high in sugar like many pancake syrups found in grocery stores. So go ahead, pour it on pancakes and anything else your heart desires! (my heart desires to pour it on chicken strips….sweet/salty…yummm!)

Servings 2 cups

Ingredients

  • 2 c . water
  • 1/2-3/4 c . stevia or sweetener of choice *add more or less depending on your preference
  • tiny pinch finely ground sea salt
  • 2-3 tsp maple or vanilla extract * See NOTE
  • 1 tsp guar gum

Instructions

  1. Combine water, stevia, salt and extract in a sauce pan and bring to a boil
  2. Whisk in guar gum until completely dissolved. Add in more guar gum to make thicker 1/8 tsp at a time. Keep in mind guar gum has 8x the thickening power of cornstarch, so a little goes a long way.
  3. If clumps form from the guar gum you have added too much. Try adding additional water and other ingredients or you can choose to strain the mixture.
  4. Transfer to desired container and let cool.
  5. Store in the refrigerator.

Recipe Notes

Try using other extracts by themselves or in combination with each other such as root beer, caramel, butter, peppermint and coconut extract. The extract may even be able to left out all together depending upon your preferences. You can even try adding cinnamon to the syrup or even cocoa to make it chocolate while heating the water. Make a coffee flavored syrup by using coffee instead of water to make the syrup. I can usually buy stevia in bulk. It can be found near the other sweeteners and sugar at the grocery store
