Today’s post is for the recipe Vanilla Chia Seed Pudding. I knew that chia seeds were very good for a person’s health, but I didn’t realize how good they were. After discovering their unique properties and seeing a couple of recipes from other blogs that used chia seed I knew that I needed to experiment to learn more about this interesting little seed that is quite the powerhouse.

After comparing a few sources I cam up with some very interesting results. Chia seeds are very rich in the essential omega-3 fatty acids. These are type of fats that our body cannot make on their own, but one that needs to be in a person’s diet. These amazing seeds contain quite a few different nutrients (calcium, phosphorus, magnesium, manganese, copper, iron, niacin, and zinc). Not only that, but one serving contains more omega-3 fatty acids than a serving of flax seed. Also keep in mind that in order to get these fatty acids from flax, the flax seed must be ground. Chia seeds do not have to be ground but can remain whole due to its richness in antioxidants. They have a longer shelf life because they won’t deteriorate as quickly as flax due to their wholeness. Chia seeds can also act as a thickening agent as in this pudding recipe. The chia seeds give this pudding a tapioca feel when eaten and the almond milk contributes the tapioca flavor.

Vanilla Chia Seed Pudding

Ingredients

  • 1/3 c . chia seeds
  • 3 c . milk of choice *See note I use almond milk
  • Sweetner of choice stevia, honey, sugar, agave etc. ...
  • vanilla extract

Instructions

  1. place 1 c. milk and chia seeds in a large mason jar, a bowl, or a container with a lid/cover.
  2. Stir or shake the mixture until well combined
  3. Let sit in the refrigerator overnight
  4. Stir well when the mixture is taken out of the refrigerator and it is advisable to stir often to break up any clumps of chia seeds
  5. Add 1/2 c. milk and stir in well
  6. let sit for 1/2 hour or until thickened
  7. repeat the process of adding milk and letting sit until you have add the other 2 c.s of milk
  8. add more milk if you want it thinner
  9. sweeten to taste
  10. mix in vanilla extract

Recipe Notes

Use 2 c. almond milk for a thicker pudding To make LESS of the VANILLA CHIA PUDDING use 5 1/2 Tbsp. per 1 cup of milk May be able to use 1 Tbsp. chia seeds per 1/4 c. of milk
