Just Like Grandma's Chocolate Chip Cookies


  • 3 flax eggs 3 Tbs. ground flax + 9 Tbs. water, mix together and allow to thicken by setting aside for 5-10 minutes
  • 3/4 c. compliant margarine melted (or melted coconut oil)
  • 3/4 c. white sugar or sugar substitute I used erythritol
  • 1 1/2 c. brown sugar
  • 1 1/2 tsp. vanilla
  • 1 1/2 c. gluten free flour blend
  • 1 1/2 tsp. baking soda
  • 1 tsp salt
  • 1 tsp. xanthan gum
  • 1 1/2 c. oatmeal
  • 12 oz compliant chocolate chips I use the Enjoy Life brand
  • 1 c. gluten free flour blend


  1. Preheat the oven to 350 degrees F and line two cookie baking sheets with parchment paper.
  2. Prepare the flax eggs and set aside.
  3. Cream the margarine or coconut oil, sugar or sugar substitute, and brown sugar.
  4. Once the flax eggs are ready add them to the sugar mixture along with the vanilla and beat well.
  5. Add the first 1 1/2 c. gluten free flour blend, baking soda, salt, and xanthan gum. Mix well.
  6. Add the oatmeal, chocolate chips and mix well.
  7. Add the remaining 1 c. gluten free flour blend and mix well again.
  8. Using a small cookie scoop scoop out the dough in balls on the prepared cookie sheets. Using the palm of your hand or a large spoon/spatula press the balls flat to about 1/4 - 1/2 inch thick.

  9. Bake for 14 minutes rotating halfway.
  10. Remove from the oven and allow to cool before enjoying. These cookies an be transfered to a cooling rack to cool.
  11. Store in an airtight container at room temperature.

  12. Enjoy with your milk of choice!
